Salmon species
- King Salmon
Also known as Chinook salmon, King salmon live for four to seven years and are the largest of the five Pacific Salmon - weighing up to 100 pounds. They are richly flavored with firm flesh ranging from ivory white to deep red in color. Its high oil content makes it a prime candidate for grilling, broiling, sautéing, baking, poaching, steaming and smoking.
- Sockeye Salmon
Also known as Red salmon, Sockeye live for four to six years and weigh up to seven pounds and grow to almost three feet in length. They are the most sought after salmon species due to their rich flavor and deep red flesh color. Sockeye have the highest content of Omega-3's of all the Pacific salmon.
- Coho Salmon
Also known as Silver salmon due to their bright silver scales, Coho live from three to four years and weigh up to 15 pounds. Their full flavor is coupled with a very fine texture, and consistent red flesh.
- Pink Salmon
Pink Salmon usually live for two years and are the smallest and most abundant of the Pacific salmon - weighing up to five pounds. They have a lighter flavor with soft pink flesh color. Pinks are great for baking and because of their milder flavor make an excellent vehicle for sauces.
- Keta Salmon
Also known as Chum salmon, Keta live for three to five years, weigh up to 10 pounds and can grow to be 25 to 27 inches long. They offer a firm texture, with a milder, more delicate flavor with a creamy pink to orange flesh color. Keta salmon are very good for smoking.
