Grilled Salmon Fattoush Salad

Serves Four

4 Fillets Salmon
1 recipe Mideast Rub (see below)
3 c. Mixed Greens
1 c. cooked and chilled lentils
1 c. pita chips (homemade or store bought)
¼ c. light vinaigrette (homemade or store bought)
4 c. prepared Saffron Rice (store bought or homemade)
Cook lentils according to package directions and chill. Cook saffron rice according to package directions and set aside at room temperature.
Season salmon with Mideast rub. Grill salmon over medium-high heat to desired doneness.
Spread rice in a layer in the bottom of a large serving dish. Toss the mixed greens with vinaigrette, lentils and pita chips and lay over the rice. Place grilled salmon on top of greens and serve.

Mideast Rub

1 Tbs. Curry Powder
1 tsp. Cumin
1 tsp. Kosher Salt
½ tsp. Cayenne Pepper
½ tsp. Black Pepper

Mix all ingredients together to form rub.
