Pistachio Crusted Salmon

Serves 2

2 salmon filets (5 oz. each)
1/3 c. pistachios
1/8 tsp. cayenne pepper
2 Tbs. fresh cilantro

Preheat oven to 350 degrees.

Place pistachios, cayenne pepper and cilantro in a food processor. Pulse several times to coarsely chop the nuts. Pour mixture into a shallow bowl.

Mist salmon filets with olive oil spray, or brush lightly. Press flesh side of salmon into nut mixture.

Spray oven safe pan with olive oil spray and place salmon in pan. Bake in oven for 15 to 20 minutes or until fish flakes easily.
