Orange Whiskey Glazed Salmon

Serves 6

6 salmon fillets (7 oz. each)
1 c. sweet orange marmalade
2/3 c. Irish whiskey
1/8 tsp. ground nutmeg
1 Tbs. Dijon mustard

Preheat oven to 425°F. Boil marmalade, whiskey and nutmeg in saucepan until reduced to generous 3/4 cup, stirring often, about 7 minutes. Mix in 1 tablespoon mustard.

Place salmon on a non-stick roasting pan. Glaze salmon with marmalade whiskey mixture and roast in oven to desired doneness (approximately 6 minutes for medium rare; 12-15 minutes for cooked through).

This salmon is delicious served with some roasted beets and potatoes, tossed with some frisee and goat cheese.
