Steamed Mussels with Tomato and Basil

Shellfish Pan Roast

Serves 1 as an entrée;
Serves 2 or 3 as an appetizer

Ingredients:
1 pound mussels
½ c. white wine
1 Tbs. chopped shallots
1 tsp. chopped fresh basil
1 Roma tomato, chopped into 8 pieces

Instructions:
Place all ingredients into a pot with a lid over high heat. Steam covered for 2 to 3 minutes, or until all of the shells are completely open. (Discard any mussels that do not open completely).

Serve in a large serving bowl with plenty of crusty bread for dipping!
