Mediterranean Ling Cod

Serves 1
1 filet Ling cod
1 Tbs. butter or olive oil
½ tsp. chopped garlic
½ tsp. chopped shallots
8 kalamata olives
¼ c. artichoke hearts
Pinch of finely chopped basil
¼ c. diced tomatoes
½ oz. white wine
1 Tbs. feta cheese
Sear ling cod in a hot pan with a drizzle of olive oil until cooked to desired doneness. Set on serving plate.
Sauté garlic and shallots with butter or olive oil in a saucepan over medium heat. Add artichoke hearts and olives. Deglaze the pan with the white wine to make a sauce. Add basil and tomatoes.
Top finished cod with mixture from pan and garnish with crumbled feta cheese.
