Pan-Seared Halibut with Fresh Berries

McCormick’s Fish House & Bar, Beaverton, Oregon
Serves 1
1 filet halibut (5 to 7 oz.), may substitute any white fish like cod, snapper, rockfish, etc.
Flour to coat
1 tsp. olive oil
½ c. fresh berries (blackberries, raspberries, blueberries)
1 oz. white wine
½ tsp. fresh lemon juice
Salt and pepper to taste
1. Heat a sauté pan over medium heat
2. Coat halibut filet in flour, remove excess
3. Add oil to pan and heat
4. Make sure pan is hot, and add halibut filet
5. Cook for 3-5 minutes on one side, flip filet over
6. Add half of the berries to pan
7. Deglaze pan with white wine and lemon juice
8. Continue cooking fish and berries for 3-5 minutes, until fish is cooked to desired temperature.
9. Add remaining berries to the pan and season to taste with salt and pepper.
10. Serve and enjoy!
