Salmon

Salmon are members of the Salmonidae family. Typically, they are considered to be anadromous; meaning that they are born in fresh water, migrate to the ocean, then return to fresh water to reproduce. Salmon can be found in the Atlantic and Pacific Oceans, as well as the Great Lakes and other land locked lakes. Because of their unique genetic makeup, salmon appear silvery in the sea and more brightly hued in brooks and lakes.
Salmon is a popular fish dish that is considered to be very healthy. Like many fish, it is a great source of protein that is also low in fat. Salmon is also high in Omega-3 fatty acids which are considered to be good for the heart. Salmon flesh ranges in color from pink to red to orange. Smoked salmon is a popular preparation method, and can either be hot or cold smoked. Lox can refer either to cold smoked salmon or to salmon cured in a brine solution.
